- 10 ounces semisweet chocolate (roughly 1 3/4 cups chopped)
- 1 cup granulated sugar (or 3/4 cup brown sugar for deeper flavor)
- 6 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon flaked sea salt (plus extra for finishing)
- Optional: 1/2 cup toasted nuts, 1/3 cup toffee bits
Instructions
- Line a baking sheet with parchment paper and spread the pretzel pieces in an even layer.
- Melt the chocolate in a double boiler or microwave in 20-second bursts, stirring each time, until smooth. Spread half the melted chocolate in a thin, even layer over the pretzels.
- In a medium saucepan, combine sugar and butter over medium heat. Stir constantly, and when the sugar dissolves and the mixture turns a deep amber, remove it from the heat.
- Slowly whisk in the heavy cream and vanilla; continue whisking until smooth. Fold in the flaked sea salt.
- Immediately pour the caramel over the chocolate-covered pretzels, spreading gently. Drizzle the remaining melted chocolate on top and scatter optional toppings. Finish with flaked sea salt.
- Chill in the fridge for at least 30 minutes until firm, then break into pieces and serve at room temperature.

For a gluten-free option, use gluten-free pretzels. Experiment with toppings like chopped toasted nuts or espresso beans for variety.
