- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground ginger
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese (block form)
- 1/4 cup unsalted butter
- 2 cups powdered sugar (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and spices.
- In another bowl, combine the pumpkin puree, sugar, eggs, and vanilla until smooth, then gradually mix in the flour mixture.
- Drop dollops of batter onto prepared baking sheets, aiming for about 12 pies.
- Bake for 12-15 minutes or until edges are set; let cool before transferring to a wire rack.
- Beat softened butter and cream cheese together, then gradually add powdered sugar and vanilla until fluffy.
- Spread or pipe the cream cheese filling onto the flat side of one cooled pie and press another pie on top.
- Refrigerate for about an hour before serving to meld flavors.

Use room temperature ingredients for a smoother filling and ensure you do not overmix the batter.
