Ingredients
- Small pumpkins (about 4-6)
- Mozzarella cheese (fresh or shredded)
- Cooked Italian sausage (or any protein of your choice)
- Tomato sauce (homemade or store-bought)
- Fresh basil or Italian herbs
- Garlic (fresh or dried)
- Olive oil
- Salt and pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully wash the small pumpkins, slice off the tops, and scoop out the seeds and pulp.
- In a skillet, heat olive oil and sauté minced garlic, then add cooked sausage and tomato sauce along with herbs, salt, and pepper.
- Remove from heat and fold in the cheese.
- Fill the hollowed-out pumpkins with the mixture, creating a little mound on top.
- Place the stuffed pumpkins upright in a baking dish, cover with foil, and bake for 25-30 minutes.
- Remove the foil and roast for an additional 15 minutes, or until tops are golden and pumpkin flesh is tender.
- Let sit for a few moments before serving warm.
