- 1 cup pumpkin puree
- 1 cup brown sugar
- 2 large eggs
- ½ cup light olive oil
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
- ¼ tsp salt
- ½ cup pepitas (pumpkin seeds)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the pumpkin puree, eggs, brown sugar, and oil. Whisk until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
- Gradually fold the dry ingredients into the pumpkin mixture, being careful not to overmix.
- Stir in half of the pepitas into the batter.
- Transfer the batter into a greased loaf pan and sprinkle the remaining pepitas on top.
- Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For enhanced flavor, consider toasting the pepitas before adding them to the batter. Letting the bread sit overnight helps deepen the flavors.
