- 200g digestive biscuits or Graham crackers (substitute with Oreo cookies)
- 100g unsalted butter (or coconut oil)
- 250g cream cheese (use full-fat for best results)
- 250g mascarpone cheese (or sour cream)
- 100g powdered sugar (or maple syrup)
- 200g dark chocolate (at least 70% cocoa)
- 1 tsp vanilla extract (optional)
Instructions
- Prepare the crust by crushing digestive biscuits in a food processor or zip-top bag until fine crumbs form.
- Mix the biscuit crumbs with melted butter and press the mixture into the bottom of a 9-inch springform pan.
- In a bowl, beat cream cheese and mascarpone until smooth, then gradually add powdered sugar and vanilla until lump-free.
- Melt dark chocolate in a double boiler or microwave, ensuring it doesn’t burn, then fold it into the cheese mixture.
- Pour the chocolate mixture over the crust, smoothing the top, and chill in the fridge for at least 4 hours or overnight.
Notes
Add a dusting of cocoa powder on top before serving or garnish with fresh berries for extra flavor.
