Description

Deliciously nostalgic mini pecan pies with a buttery crust and rich, caramel-like filling.


Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 cup fresh chopped pecans
  • 3/4 cup brown sugar
  • 1/2 cup corn syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out your pie crust and cut circles to fit into a muffin tin. Chill while preparing the filling.
  3. In a mixing bowl, combine brown sugar, corn syrup, eggs, and vanilla extract. Whisk until smooth.
  4. Stir in chopped pecans.
  5. Pour the filling into each pie crust, filling just below the rim.
  6. Bake for 25-30 minutes, until set and golden brown.
  7. Allow to cool in the muffin tin before removing.

Notes

Serve warm or at room temperature. Pairs well with ice cream or whipped cream.
