Deliciously nostalgic mini pecan pies with a buttery crust and rich, caramel-like filling.
Ingredients

- 1 pie crust (store-bought or homemade)
- 1 cup fresh chopped pecans
- 3/4 cup brown sugar
- 1/2 cup corn syrup
- 2 eggs
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Roll out your pie crust and cut circles to fit into a muffin tin. Chill while preparing the filling.
- In a mixing bowl, combine brown sugar, corn syrup, eggs, and vanilla extract. Whisk until smooth.
- Stir in chopped pecans.
- Pour the filling into each pie crust, filling just below the rim.
- Bake for 25-30 minutes, until set and golden brown.
- Allow to cool in the muffin tin before removing.
Notes
Serve warm or at room temperature. Pairs well with ice cream or whipped cream.
