Ingredients

- 1/2 cup chia seeds
- 2 ripe mangoes, pureed
- 2 cups coconut milk
- 2–4 tablespoons honey or maple syrup (optional)
Instructions
- Prepare the Mango: Peel and chop the mango, then blend until smooth, set aside.
- Combine Ingredients: In a bowl, mix chia seeds with coconut milk and sweetener if using, stirring well.
- Blend Together: Pour mango puree into chia mixture and stir until combined.
- Chill: Cover and refrigerate for at least 4 hours, preferably overnight.
- Serve: Once thickened, stir gently and spoon into serving glasses. Top with fresh mango cubes if desired.
Notes
Best enjoyed chilled and can last in the refrigerator for up to five days.
