Ingredients
Scale
- 4 orange bell peppers
- 1 lb ground beef or turkey
- 1 cup chopped mushrooms (button or cremini)
- 1 cup cooked rice or quinoa
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 cup tomato sauce
- Fresh parsley or basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the orange bell peppers and scoop out the seeds.
- In a skillet over medium heat, sauté onions and garlic in olive oil until translucent.
- Add ground meat and cook until browned. Stir in mushrooms and cook for a few more minutes.
- Combine the mixture with cooked rice and herbs. Add a dash of tomato sauce for moisture.
- Stuff each pepper with the filling, then set them upright in a baking dish.
- Pour a bit of tomato sauce around the base of each pepper to keep them moist.
- Cover with foil and bake for 25-30 minutes. Remove foil for the last 10 minutes to crisp the tops.
Notes
Choose firm peppers and avoid overstuffing them to allow for expansion during cooking. Let peppers rest for a few minutes after baking for the best flavor.
