- 4 large egg yolks
- ½ cup granulated sugar
- 2 cups whole milk
- 1 cup heavy cream
- ½ teaspoon freshly grated nutmeg
- Pinch of ground cinnamon
- Optional: ½ to 1 cup bourbon, rum, or brandy
Instructions
- In a mixing bowl, whisk together egg yolks and sugar until pale and creamy.
- Slowly pour in whole milk and heavy cream while whisking continuously.
- Add freshly grated nutmeg and ground cinnamon.
- Pour the mixture into a saucepan and heat gently over medium heat, stirring until it reaches about 160°F without boiling.
- Remove from heat and allow to cool slightly; stir in spirits if desired.
- Refrigerate for at least 2 hours before serving.
- Stir well and serve in chilled glasses with a sprinkle of nutmeg or cinnamon on top.
Notes
For a frothier texture, beat an egg white to soft peaks and fold it in just before serving.
