Description
A comforting apple pie with sweet and tart apple flavors, spiced with cinnamon and nutmeg, all encased in a flaky, buttery crust.
Ingredients
Scale
- 4 cups apples (a mix of tart and sweet varieties like Granny Smith and Honeycrisp)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 1/4 tsp freshly grated nutmeg
- 1/4 tsp ground clove
- Zest of 1 lemon
- 2 tbsp cornstarch
- 2 tbsp unsalted butter (for topping)
- 1 double-crust pie dough (store-bought or homemade)
- 1 egg (for egg wash)
- Coarse sugar (for sprinkling)
Instructions
- Prepare the crust: Chill your mixing bowl, grate cold butter into flour, pulse or rub until pea-sized crumbs form. Add ice water gradually until dough forms. Wrap and chill for at least 30 minutes.
- Make the filling: Peel, core, and slice apples into 1/4-inch thick slices. Toss them with granulated sugar, brown sugar, cinnamon, nutmeg, clove, lemon zest, and cornstarch until evenly coated.
- Assemble: Roll half the dough into a circle to line a 9-inch pie pan. Fill with spiced apples, mounding slightly, and dot with butter.
- Top crust: Roll out second dough, cover pie, or create a lattice crust. Brush with egg wash and sprinkle with coarse sugar.
- Bake: Preheat oven to 425°F (220°C). Bake for 20 minutes, then reduce to 375°F (190°C) and bake for another 35-45 minutes until bubbling and golden. Shield edges with foil if browning too quickly.
- Rest: Cool for at least 2 hours before serving. Enjoy with whipped cream or vanilla ice cream.
Notes
Use a mix of different apple varieties for the best flavor. Keeping ingredients cold is crucial for a flaky crust.
