Description

A bright and flavorful side dish featuring fluffy rice infused with zesty lemon and aromatic dill, perfect for any meal.

Ingredients

Scale
  • 1 cup long-grain rice (Basmati or jasmine)
  • 2 cups chicken or vegetable broth (or water)
  • 1/4 cup fresh dill, chopped
  • 1/4 cup lemon juice and zest
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Rinse the rice under cold water until it runs clear.
  2. In a medium saucepan, heat olive oil over medium heat and sauté minced garlic for about 30 seconds.
  3. Stir in the rinsed rice and toast for 2-3 minutes.
  4. Add broth or water and bring to a gentle boil.
  5. Reduce heat, stir in lemon juice, zest, and dill; season with salt and pepper.
  6. Cover and let simmer for 15-20 minutes, avoiding lifting the lid.
  7. Let the rice sit for 5 minutes off heat, then fluff with a fork before serving.

Notes

For added richness, consider including butter alongside the olive oil. Store leftovers in an airtight container for 3-4 days or freeze for up to 2-3 months.
