Ingredients

- 2 cups all-purpose flour
- 1 cup cold, diced butter
- Ice water
- 1 tablespoon olive oil
- 1 diced onion
- 2 cloves minced garlic
- 1 pound ground turkey, beef, or chicken
- 1 cup diced mushrooms
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Shredded cheese (cheddar or Monterey Jack)
- Fresh herbs
- Lime zest
Instructions
- Prepare the Dough: Combine flour and cold butter until coarse crumbs form. Add ice water until dough holds together. Wrap and chill for 30 minutes.
- Make the Filling: Heat olive oil, sauté onion and garlic, then add ground meat until browned. Stir in mushrooms, cumin, chili powder, and salt. Cook for 5-7 minutes and let cool.
- Assemble the Hand Pies: Preheat oven to 375°F (190°C). Roll out dough and cut circles. Place filling and cheese on each circle, fold and crimp edges.
- Bake to Perfection: Brush with egg wash and bake for 25-30 minutes until golden brown and filling is bubbling.
Notes
For a vegetarian option, consider using beans and grilled vegetables. Serve with salsa or creamy dipping sauce.
