A comforting slow-cooked dish featuring tender beef bites infused with garlic butter, served with creamy potatoes.
Ingredients

- 2 lbs beef chuck roast or stew meat, cut into bite-sized pieces
- 1.5 lbs Yukon Gold or baby potatoes, halved or quartered
- 4 cloves garlic, minced
- ½ cup unsalted butter
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary (or ½ tsp dried)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika (optional)
- 1 tbsp Worcestershire sauce (optional)
- ½ cup beef broth or water
Instructions
- Trim excess fat from beef and cut it into bite-sized pieces. Wash potatoes and cut larger ones into quarters. Mince garlic and measure herbs.
- Optional: Sear beef in skillet until browned, then transfer to crockpot.
- Layer potatoes and garlic over the beef. Sprinkle with herbs, seasonings, and more butter.
- Pour in beef broth or water to cover the bottom of the crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 30 minutes, check for tenderness; beef should be soft and easy to pull apart.
- Serve hot, garnished with fresh herbs, alongside salad or crusty bread.
Notes
For best results, avoid opening the crockpot too often while cooking to maintain the steam. Can be prepped the night before and cooked in the morning.
