- 1.5 lbs boneless, skinless chicken breasts or thighs
- 2 cups carrots, chopped
- 1 cup peas
- 1 cup celery, chopped
- 1 onion, chopped
- 2 cups chicken broth
- 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
- 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
- Salt and pepper to taste
- 1 can (16 oz) of store-bought biscuits
Instructions
- Prepare the Ingredients: Cube your chicken and chop the vegetables into bite-sized pieces.
- Sautéing Optional but Recommended: In a skillet, sauté the onions and vegetables in a bit of olive oil until they start to soften.
- Layer the Crock Pot: Place the chicken at the bottom of the crock pot, followed by the sautéed veggies. Sprinkle the herbs, salt, and pepper evenly.
- Add Broth: Pour the chicken broth over the top, just enough to cover the ingredients, then stir gently.
- Cook: Cover the crock pot and set it on low for 6-8 hours or high for 3-4 hours.
- Prepare the Biscuits: About 30 minutes before serving, add the biscuits on top of the mixture.
- Finishing Touches: Allow the biscuits to bake through until golden brown.
Notes
For best results, don’t overcrowd the crock pot and avoid peeking during cooking.
