  • 1 cup chopped walnuts
  • 1/2 cup butter or coconut oil
  • 1/2 cup maple syrup or honey
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine the rolled oats, dried cranberries, and chopped walnuts.
  3. In a separate bowl, melt the butter and whisk in the maple syrup, cinnamon, and vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and stir until well combined.
  5. Transfer the mixture to the prepared baking dish, spreading it evenly.
  6. Sprinkle chopped walnuts on top and press gently to adhere.
  7. Bake for 25-30 minutes until the edges are golden brown.
  8. Allow to cool completely before cutting into squares.
