- 2 cups rolled oats
- 1 cup dried cranberries
- 1 cup chopped walnuts
- 1/2 cup butter or coconut oil
- 1/2 cup maple syrup or honey
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, combine the rolled oats, dried cranberries, and chopped walnuts.
- In a separate bowl, melt the butter and whisk in the maple syrup, cinnamon, and vanilla extract until smooth.
- Pour the wet mixture over the dry ingredients and stir until well combined.
- Transfer the mixture to the prepared baking dish, spreading it evenly.
- Sprinkle chopped walnuts on top and press gently to adhere.
- Bake for 25-30 minutes until the edges are golden brown.
- Allow to cool completely before cutting into squares.
Notes
These bars taste even better the next day. Store in an airtight container at room temperature for up to a week.
