Ingredients

  • 1 cup good-quality mayonnaise
  • 2 tablespoons finely chopped dill pickles or cornichons
  • 1 tablespoon capers, rinsed and chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh herbs (dill, parsley, or chives), chopped
  • 1 tablespoon finely chopped shallot or red onion
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Finely mince the shallot and parsley.
  2. Chop the pickles into small cubes and drain and roughly chop the capers.
  3. In a bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
  4. Add the shallots, pickles, capers, and herbs, and fold gently.
  5. Taste and season accordingly, then let rest for at least five minutes before serving.
  6. If desired, pulse everything in a food processor for a silkier texture.

Notes

Refrigerate the sauce for at least 10 minutes if using dried herbs to allow flavors to fully develop. Serve with fried seafood, sandwiches, or as a dip.
