Ingredients

- 1 cup good-quality mayonnaise
- 2 tablespoons finely chopped dill pickles or cornichons
- 1 tablespoon capers, rinsed and chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh herbs (dill, parsley, or chives), chopped
- 1 tablespoon finely chopped shallot or red onion
- Salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Finely mince the shallot and parsley.
- Chop the pickles into small cubes and drain and roughly chop the capers.
- In a bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
- Add the shallots, pickles, capers, and herbs, and fold gently.
- Taste and season accordingly, then let rest for at least five minutes before serving.
- If desired, pulse everything in a food processor for a silkier texture.
Notes
Refrigerate the sauce for at least 10 minutes if using dried herbs to allow flavors to fully develop. Serve with fried seafood, sandwiches, or as a dip.
