Description
A playful dessert that combines the textures of rice paper or crepes with sweet fillings like fruit and creamy mascarpone.
Ingredients
- Thin crepes or rice paper wrappers
- Soft cream (mascarpone, sweetened ricotta, or whipped cream)
- Fresh fruit (mango, strawberries, banana, pear, or figs)
- A sauce (chocolate ganache, caramel, or sweetened soy caramel)
- Crunch (toasted coconut flakes, crushed biscuits, or toasted nuts)
- Aromatics (fresh mint, basil, or sea salt)
- Optional: browned butter, citrus zest, or honey
Instructions
- Prepare your elements: warm crepes or rehydrate rice papers as per package instructions.
- Lay your crepe or softened rice paper on a clean surface and spread a thin layer of cream across the center, leaving edges clear.
- Arrange fruit slices in a line over the cream and sprinkle with crushed biscuit or toasted coconut.
- Add mint leaves or chopped herbs and dot with browned butter or citrus zest if desired.
- Roll gently but firmly, tucking edges to create a neat log and seal the edge with cream or honey.
- Chill for at least 15 minutes or sear in a hot skillet for 10-20 seconds per side.
- Slice with a sharp wet knife, drizzle with sauce, sprinkle flaky salt, and add fresh herbs.
Notes
Always work with cool fillings to avoid runny creams, and keep unused rice papers damp to prevent drying out.
