- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup peanut butter
- 1/2 cup melted butter
- 1 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat the eggs and mix in the granulated sugar, brown sugar, and peanut butter until creamy.
- Stir in the buttermilk and melted butter until smooth.
- Gradually add the dry ingredients to the wet mixture, folding them together until just combined. Small lumps are okay.
- Gently fold in the chocolate chips.
- Spoon half of the batter into the muffin cups. Place spoonfuls of peanut butter over the batter, then add another layer of muffin batter to cover.
- Using a knife or skewer, swirl through the batter to create patterns.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow cooling in the tin for about 5 minutes before transferring to a wire rack.
Notes
For best results, measure flour correctly and avoid overmixing the batter.
