Ingredients

  • 1 cup orzo pasta
  • 23 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups vegetable or chicken broth
  • 2 cups fresh spinach
  • ½ cup chopped sun-dried tomatoes
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Olive oil, for sautéing
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Warm a drizzle of olive oil in a large skillet over medium heat. Add chopped onion and minced garlic. Sauté until translucent (3-5 minutes).
  2. Add orzo to the skillet, stirring to coat it in oil. Toast for 2-3 minutes until slightly golden.
  3. Pour in the broth and bring to a boil. Lower heat and simmer for 10-12 minutes, stirring occasionally.
  4. Fold in spinach and sun-dried tomatoes, stirring until spinach wilts.
  5. Remove from heat and stir in heavy cream, salt, pepper, and Parmesan until combined.
  6. Serve warm, garnished with extra Parmesan and fresh basil if desired.

Notes

Stir frequently to prevent orzo from sticking. Adjust seasoning to taste and use reserved pasta water if the sauce is too thick.
