- 1 pound ground turkey
- 1 cup orzo pasta
- 1 can (15 oz) crushed tomatoes
- 1 cup heavy cream or coconut milk
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon fresh thyme
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
- Grated Parmesan for serving (optional)
Instructions
- In a large bowl, combine ground turkey, minced garlic, chopped parsley, salt, and pepper. Mix gently and form small meatballs, about a tablespoon each.
- In a large pot, heat olive oil over medium-high heat. Brown the meatballs for 5-7 minutes until golden. Remove from the pot and set aside.
- In the same pot, add more oil if needed. Sauté the onion and garlic until soft and fragrant.
- Pour in the canned tomatoes and broth. Stir to combine and let it simmer.
- Add the orzo to the simmering broth, cooking until al dente, about 8-10 minutes.
- Gently return the meatballs to the pot.
- Stir in heavy cream and fresh herbs, simmer for an additional 5 minutes.
- Ladle the soup into bowls, garnishing with more fresh herbs and grated Parmesan if desired.
Notes
Avoid overcooking the orzo; aim for al dente as it will continue to absorb broth. For added flavor, don’t skip browning the meatballs.
