Ingredients
- Fettuccine or linguine pasta
- Fresh wild-caught salmon
- Heavy cream
- Garlic, minced
- Mixed greens (spinach, arugula, and kale)
- Lemon zest and juice
- Fresh dill or basil
- Olive oil
- Salt and pepper
Instructions
- Cook the pasta in a pot of salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
- In a large skillet, heat olive oil over medium-high heat. Season the salmon with salt and pepper, place it skin-side down, and sear for 4-5 minutes. Flip and cook for another 3-4 minutes until it flakes easily. Remove and let rest before flaking.
- Add garlic to the skillet and sauté until fragrant, about 30 seconds.
- Pour in the heavy cream, lemon juice, and zest, stirring to reduce slightly. Add reserved pasta water if too thick.
- Add the drained pasta and flaked salmon to the skillet, tossing gently to coat with the sauce. Fold in mixed greens until just wilted, then season with salt, pepper, and herbs.
- Plate and garnish with additional herbs and a squeeze of lemon.
Notes
Feel free to substitute salmon with shrimp or chicken, and adjust the greens based on seasonality.
