- 1 cup ricotta or mascarpone cheese
- 1 cup cooked mushrooms, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds. Lightly coat them with olive oil and season with salt.
- In a skillet, heat olive oil over medium heat. Sauté diced onions and minced garlic until golden. Add chopped mushrooms and cook until they release their moisture. Combine this mixture with your cheese selection, herbs, salt, and pepper in a large bowl.
- Generously fill each bell pepper with the creamy filling. Place them upright in a baking dish.
- Cover the dish with foil and bake for 30 minutes. Remove the foil for the last 10 minutes to allow the tops to brown slightly.
- Serve warm with a sprinkle of fresh herbs on top.
