Description
A comforting and indulgent side dish made with russet potatoes, roasted garlic, and creamy Parmesan.
Ingredients

- 2 pounds russet potatoes
- 1/2 cup unsalted butter
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 head of roasted garlic
- Salt and pepper to taste
Instructions
- Peel and cut the russet potatoes into quarters.
- Cover the potatoes with cold water in a large pot and add a pinch of salt. Bring to a boil and simmer for 15-20 minutes, or until tender.
- While the potatoes are cooking, roast the garlic by slicing the top off, drizzling with olive oil, wrapping in foil, and baking at 400°F (200°C) for about 30 minutes.
- Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or ricer.
- Add the roasted garlic, butter, and heavy cream to the potatoes and mix until combined. Gradually stir in Parmesan cheese, salt, and pepper to taste.
- Taste and adjust seasoning as needed.
Notes
For a lighter version, substitute heavy cream with half and half or Greek yogurt. Serve alongside roasts or vegetables for a complete meal.
