Creamy Garlic Parmesan Mashed Potatoes

Description

A comforting and indulgent side dish made with russet potatoes, roasted garlic, and creamy Parmesan.


Ingredients

  • 2 pounds russet potatoes
  • 1/2 cup unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 head of roasted garlic
  • Salt and pepper to taste

Instructions

  1. Peel and cut the russet potatoes into quarters.
  2. Cover the potatoes with cold water in a large pot and add a pinch of salt. Bring to a boil and simmer for 15-20 minutes, or until tender.
  3. While the potatoes are cooking, roast the garlic by slicing the top off, drizzling with olive oil, wrapping in foil, and baking at 400°F (200°C) for about 30 minutes.
  4. Drain the cooked potatoes and return them to the pot. Mash them using a potato masher or ricer.
  5. Add the roasted garlic, butter, and heavy cream to the potatoes and mix until combined. Gradually stir in Parmesan cheese, salt, and pepper to taste.
  6. Taste and adjust seasoning as needed.

Notes

For a lighter version, substitute heavy cream with half and half or Greek yogurt. Serve alongside roasts or vegetables for a complete meal.
