Ingredients

- 2 Chicken breasts (or thighs)
- 1 cup Orzo pasta
- 4 cups Chicken broth
- 1 cup Heavy cream (or half-and-half)
- 2 cloves Garlic, minced
- 1 Onion, diced
- 1 cup Fresh herbs (thyme, oregano, or parsley)
- 1 cup Mushrooms (optional)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a splash of olive oil in a large pot over medium heat. Season the chicken with salt and pepper, then sear it until golden, about 5-7 minutes. Remove and set aside.
- In the same pot, add a bit more oil if needed and sauté diced onions and minced garlic until fragrant, about 2 minutes. If using, add chopped mushrooms.
- Pour in orzo and mix well, letting it toast for a minute. Then add chicken broth and bring everything to a boil.
- Return the chicken to the pot, reduce the heat, cover, and let it simmer until the orzo is tender, about 10-12 minutes.
- Once the orzo is cooked, lower the heat and stir in the heavy cream until well combined. Add fresh herbs to taste.
- Serve hot, finished with a sprinkle of grated Parmesan cheese if desired.
Notes
Taste frequently and adjust seasoning as needed. If the dish becomes too thick, add a splash of chicken broth or water for desired consistency.
