  • 16 ounces of cream cheese, softened
  • 1 cup of granulated sugar

  • 3 ripe bananas, mashed
  • 4 large eggs
  • 1 package of instant banana cream pudding mix
  • 2 cups of milk
  • 1 cup of whipped cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Bake for 10 minutes, then let it cool completely.
  5. In a large mixing bowl, beat the softened cream cheese until smooth. Add in the sugar and vanilla extract, mixing until well blended.
  6. Incorporate the mashed bananas, followed by the eggs, one at a time, until just combined.
  7. Pour the filling onto the cooled crust, smoothing the top with a spatula.
  8. Bake for about 55-60 minutes, until the center is set but still a bit wobbly.
  9. Turn off the oven, crack the door, and let the cheesecake cool slowly inside for an hour.
  10. While the cheesecake is cooling, whisk together the pudding mix and milk in a separate bowl until thickened.
  11. Once the cheesecake is cool, spread the banana cream pudding layer evenly over the cheesecake.
  12. Top with dollops of whipped cream and crushed graham crackers.
  13. Cover and refrigerate for at least 4 hours, preferably overnight, before serving.
