- 1 ½ cups of graham cracker crumbs
- ⅓ cup of sugar
- ½ cup of melted butter
- 16 ounces of cream cheese, softened
- 1 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 3 ripe bananas, mashed
- 4 large eggs
- 1 package of instant banana cream pudding mix
- 2 cups of milk
- 1 cup of whipped cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture firmly into the bottom of a springform pan.
- Bake for 10 minutes, then let it cool completely.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add in the sugar and vanilla extract, mixing until well blended.
- Incorporate the mashed bananas, followed by the eggs, one at a time, until just combined.
- Pour the filling onto the cooled crust, smoothing the top with a spatula.
- Bake for about 55-60 minutes, until the center is set but still a bit wobbly.
- Turn off the oven, crack the door, and let the cheesecake cool slowly inside for an hour.
- While the cheesecake is cooling, whisk together the pudding mix and milk in a separate bowl until thickened.
- Once the cheesecake is cool, spread the banana cream pudding layer evenly over the cheesecake.
- Top with dollops of whipped cream and crushed graham crackers.
- Cover and refrigerate for at least 4 hours, preferably overnight, before serving.
