Ingredients

  • 1 lb ground turkey
  • 8 oz cremini or shiitake mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 1 cup frozen peas
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 cups mashed potatoes
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons butter (or dairy-free alternative)
  • 1/4 cup cream (or milk)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onions, garlic, and carrots until softened.
  2. Add ground turkey and cook until browned, then stir in mushrooms.
  3. Once ingredients are golden, sprinkle in fresh thyme and rosemary.
  4. Add frozen peas and cook until just softened.
  5. Pour in chicken broth and simmer until thickened, seasoning with salt and pepper.
  6. Meanwhile, boil peeled potatoes until tender, then mash with butter and cream, seasoning with salt.
  7. In a baking dish, layer the turkey-mushroom filling, then top with mashed potatoes, spreading evenly.
  8. Create ridges in the potato topping with a fork for extra crispiness.
  9. Preheat oven to 400°F (200°C) and bake for 25-30 minutes until the top is golden.
  10. Allow to rest before serving to meld flavors.

Notes
