- In a saucepan over medium heat, combine sugar and vinegar, stirring until the sugar dissolves.
- Add the sliced jalapeños and bring to a boil, being careful of bubbling.
- Reduce heat and simmer for 20 minutes, adding spices if desired.
- Transfer the jalapeños to sterilized jars, pouring syrup over them. Seal tightly.
- Let cool at room temperature, then refrigerate for 24 hours for optimal flavor.
