- 6 tablespoons unsalted butter
- 2 tablespoons finely minced shallot (optional)
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- 1/2 teaspoon salt
- Black pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Prep all ingredients before heating the pan.
- Melt the unsalted butter in a small saucepan over medium heat, swirling until the milk solids turn golden-brown.
- Add minced shallot (if using) and sauté until translucent, about 1 minute.
- Add minced garlic and cook for 30–45 seconds until fragrant.
- Stir in the Dijon mustard and Worcestershire sauce.
- Add the lemon juice and zest, whisking to combine.
- Remove from heat and whisk in chopped parsley and chives. Season with salt, black pepper, and red pepper flakes.
- Adjust seasoning to taste and serve immediately or chill as a compound butter.
Notes
For a lighter version, reduce butter by half and whisk in a neutral oil. Fresh herbs are preferable for flavor.
