Ingredients

- 3 cups bread flour (or all-purpose flour)
- 1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
- 1 packet active dry yeast
- 1 tablespoon honey (or maple syrup for vegan)
- 1 teaspoon cinnamon
- 1 cup raisins
- 1 cup warm water
- 1 pinch of salt
Instructions
- Mix warm water and honey in a bowl, then sprinkle the yeast on top and let it bubble for about 5 minutes.
- In a separate bowl, combine bread flour, a pinch of salt, and cinnamon. Gradually pour in the activated yeast mixture followed by the Greek yogurt, stirring until a dough forms.
- Knead the dough on a floured surface for about 8 to 10 minutes until smooth and elastic.
- Incorporate the raisins into the dough and let it rise in a lightly greased bowl for about an hour.
- Preheat oven to 425°F (220°C) and boil water in a large pot. Punch down the dough, divide it, and shape into bagels.
- Boil each bagel for 30 seconds on each side, then transfer to a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden brown.
Notes
These bagels freeze beautifully. Store leftovers in an airtight container for up to three days or freeze for up to three months.
