- 2 cups fruit juice (cranberry, orange, or grape)
- 1 tablespoon unflavored gelatin
- Fresh fruits (chopped pomegranates, berries, or citrus slices)
- Sweetener (honey or agave syrup, to taste)
- Zest from citrus fruits (optional)
Instructions
- Sprinkle gelatin over a small bowl of cold water and let it bloom for about 5 minutes.
- In a saucepan, gently heat about 1 cup of your chosen fruit juice. Do not boil.
- Once warm, stir in your bloomed gelatin until fully dissolved.
- Add sweetener to the mixture, adjusting to your preferred sweetness.
- Remove the mixture from heat and let it cool slightly, then stir in your fresh fruit and optional zest.
- Pour the mixture into silicone molds or a baking dish lined with parchment paper.
- Let the Jello Balls chill in the refrigerator for at least 4 hours, or until completely set.
- Once set, carefully remove the Jello Balls from their molds and serve with additional fruits or a sprinkle of coconut.
