- 1 lb. ground beef
- 1 chopped onion
- 1 bell pepper
- 2 cloves minced garlic
- 1 packet taco seasoning
- 1 cup taco sauce
- 15 oz. ricotta cheese
- 1 egg
- Lasagna noodles (traditional or gluten-free)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- Fresh parsley (for garnish)
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain excess fat and add onions, bell pepper, and garlic. Sauté until tender, about 5–7 minutes. Stir in taco seasoning and taco sauce; simmer for 10 minutes.
- Combine ricotta cheese, egg, salt, pepper, and parsley in a bowl until well mixed.
- In a baking dish, layer the beef mixture, followed by lasagna noodles, ricotta mixture, and a sprinkle of mozzarella and cheddar. Repeat layers, finishing with cheese.
- Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake for another 15 minutes until cheese is golden.
- Let lasagna rest for 10–15 minutes before serving.
Notes
For extra flavor, consider adding vegetables like bell peppers or corn. Adjust spice level by modifying the taco seasoning.
