- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 large egg
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 cups popped popcorn (unsalted)
- Flaky sea salt, to taste
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt the butter in a small saucepan until browned slightly, then let it cool.
- In a large mixing bowl, mix the brown and granulated sugars with the cooled butter until creamy.
- Add the egg and beat well to incorporate.
- In a separate bowl, whisk together the flour, baking soda, and baking powder before gradually mixing it into the wet mixture.
- Fold in the popped popcorn gently to maintain its crunch.
- Drop dollops of dough onto the prepared baking sheet leaving space between each.
- Sprinkle flaky salt on top of each dough mound before baking.
- Bake for 10-12 minutes or until edges are golden brown and cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a dairy-free version, substitute with ghee or coconut oil. You can use a flax egg instead of a regular egg for a vegan option.
