- 1 lb boneless, skinless chicken breasts or thighs
- 1 cup Buffalo sauce
- 1 cup jasmine or basmati rice
- 2 cups water or chicken broth
- 1 cup chopped celery
- 1 cup diced bell peppers
- 1/4 cup chopped green onions
- 1/2 cup blue cheese crumbles (optional)
- 1/2 cup ranch dressing (optional)
- 1 avocado, sliced (optional)
Instructions
- Rinse the rice under cold water to remove excess starch, then cook according to package instructions in water or chicken broth.
- While the rice is cooking, season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for about 6-7 minutes per side until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest. In the same skillet, heat the Buffalo sauce gently and then return the shredded chicken, tossing until well coated.
- Serve the cooked rice in bowls, top with the Buffalo chicken, and add fresh vegetables and desired toppings.
- Garnish with chopped cilantro if desired before serving.
Notes
For extra flavor, marinate the chicken in Buffalo sauce before cooking. Mix in sautéed mushrooms or garlic for enhanced umami.
