- 2 cups black beans (canned or dried)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (red or green)
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 4 cups vegetable broth or chicken stock
- 2 tablespoons olive oil
- 1 lime, juiced
- Fresh cilantro, for garnish
Instructions
- In a large skillet or Dutch oven, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until softened and fragrant, about 3-5 minutes.
- Toss in the diced bell pepper and continue to sauté for another 3-4 minutes until softened.
- Sprinkle in the smoked paprika and cumin, stirring constantly for about a minute to let the spices bloom.
- If using canned black beans, drain and rinse; if using dried, ensure they are pre-soaked and cooked. Stir the beans into the pot.
- Pour in the vegetable broth, stir to combine, and bring to a gentle boil, then reduce heat to a simmer.
- Cover the pot and let it simmer for about 30 minutes, stirring occasionally.
- Once thickened, squeeze in lime juice, taste, and adjust seasonings as needed. Garnish with fresh cilantro before serving.
- Serve with rice, warm tortillas, or crusty bread.
Notes
This stew can easily be made vegan by using vegetable broth. For additional heat, consider adding diced jalapeños.
