- 1 loaf French bread or brioche, day-old
- 6 large eggs
- 2 cups whole milk (or half-and-half)
- 2 cups fresh blueberries (or frozen, if necessary)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup natural maple syrup
- Pinch of salt
- Additional blueberries and sugar for topping
Instructions
- Rip or cut the bread into bite-sized pieces and distribute them in a greased 9×13-inch baking dish, then evenly layer the blueberries on top.
- In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until combined. Pour the mixture over the bread and blueberries, ensuring all pieces are soaked.
- Cover with plastic wrap and chill in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat the oven to 350°F (175°C). Remove from the fridge, add more blueberries and sugar on top, then bake for 45-50 minutes until puffed and golden brown.
- Let it cool slightly before serving and drizzle with pure maple syrup.
Notes
For extra crunch, add chopped nuts before baking or include cream cheese bits for a delicious surprise.
