Description

A delicious and comforting Blueberry French Toast Casserole perfect for family gatherings and brunch.

Ingredients

Scale
  • 1 loaf French bread or brioche, day-old
  • 6 large eggs
  • 2 cups whole milk (or half-and-half)
  • 2 cups fresh blueberries (or frozen, if necessary)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup natural maple syrup
  • Pinch of salt
  • Additional blueberries and sugar for topping

Instructions

  1. Rip or cut the bread into bite-sized pieces and distribute them in a greased 9×13-inch baking dish, then evenly layer the blueberries on top.
  2. In a mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until combined. Pour the mixture over the bread and blueberries, ensuring all pieces are soaked.
  3. Cover with plastic wrap and chill in the refrigerator for at least 2 hours, or overnight for best results.
  4. Preheat the oven to 350°F (175°C). Remove from the fridge, add more blueberries and sugar on top, then bake for 45-50 minutes until puffed and golden brown.
  5. Let it cool slightly before serving and drizzle with pure maple syrup.

Notes

For extra crunch, add chopped nuts before baking or include cream cheese bits for a delicious surprise.
