Ingredients

  • 1 loaf of bread (preferably brioche or challah)
  • 2 cups of fresh blueberries (or frozen if out of season)
  • 4 large eggs
  • 2 cups of milk
  • 1/2 cup of heavy cream
  • 1/2 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • A pinch of nutmeg
  • A sprinkle of salt
  • Butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter.
  3. Slice the loaf of bread into equal cubes and toss them into the baking dish.
  4. In a large bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  5. Pour the custard over the bread cubes, gently pressing down to absorb the mixture.
  6. Scatter the blueberries generously across the surface.
  7. If desired, sprinkle a mixture of brown sugar and oats over the top.
  8. Cover the dish with foil and let it chill in the refrigerator for at least one hour (or overnight).
  9. Remove the foil and bake for 45-50 minutes until set and golden brown.
  10. Allow to cool slightly before serving; drizzle with more maple syrup or whipped cream if desired.

Notes

Let the bread sit out for a few hours to become stale for better absorption. Cover during the first half of baking to retain moisture.
