- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 tsp almond extract
- 1 cup chopped fresh cherries
- 1/2 cup sliced almonds
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, granulated sugar, brown sugar, and salt.
- In a separate bowl, mix the melted butter, eggs, and almond extract.
- Combine the wet ingredients into the dry mixture and gently fold until just combined.
- Fold in chopped cherries and sliced almonds.
- Divide the mixture among muffin cups, filling each two-thirds full.
- Bake for 18 to 22 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
- Enjoy warm or store in an airtight container once cooled.
Notes
For a vegan option, substitute eggs with flax eggs and use coconut oil instead of butter.
