- 1.5–2 pounds boneless chicken tenders or thinly sliced chicken breasts
- 6–8 ounces feta cheese, crumbled
- 2–3 cups Cheetos (flamin’ or original), crushed
- 2 eggs, beaten
- 1 cup all-purpose flour or cornstarch for a gluten-free option
- 1–2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Fresh herbs: oregano, parsley, or thyme, finely chopped
- Olive oil spray or 1 tablespoon melted butter
- Lemon wedges for serving
- Herb yogurt or tzatziki for dipping
Instructions
- Pulse Cheetos in a food processor until coarse crumbs. Stir in garlic powder, smoked paprika, chopped herbs, and half of the crumbled feta.
- Set up a dredging station with flour in one dish, beaten eggs in another, and the Cheetos-feta mixture in a third.
- Dredge each chicken tender in flour, dip in egg, and then press into the Cheetos crust to adhere.
- Scatter remaining crumbled feta over the coated tenders before baking.
- Arrange tenders on a parchment-lined baking sheet and spray lightly with olive oil or brush with melted butter.
- Bake at 425°F (220°C) for 12–15 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
- Let rest for 2–3 minutes before serving.
Notes
For a crispier result, finish under the broiler for a short time. Avoid overcrowding the baking sheet to keep the crust crunchy.
