- 2 cups shredded leftover turkey (or rotisserie chicken)
- 1 cup breadcrumbs (plain or panko)
- 2 eggs
- 2 cloves garlic, minced
- 1/2 onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup Greek yogurt (or dairy-free yogurt)
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Oil for coating
Instructions
- In a large bowl, combine shredded turkey, garlic, onion, herbs, and breadcrumbs.
- Add eggs and mix until well combined; adjust texture with broth or water if too dry.
- Shape mixture into oval croquettes, about golf ball size.
- Preheat air fryer to 380°F (190°C) for 5 minutes.
- Lightly coat croquettes in oil and place them in air fryer basket without overcrowding.
- Cook for 10-12 minutes until golden brown, flipping halfway through.
- While croquettes cook, mix yogurt, herbs, lemon juice, salt, and pepper for the dip.
- Let croquettes cool slightly before serving with the herbed yogurt dip.
