A quick and delicious Mediterranean-inspired salmon bowl featuring vibrant vegetables and a wholesome base of quinoa or couscous.

- Skin-on salmon fillets
- 1 tablespoon olive oil
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup cherry tomatoes
- 1 cup quinoa or couscous
- 2 cloves garlic, minced
- Juice of 1 lemon
- Fresh parsley, chopped
- Optional: feta cheese or kalamata olives
Instructions
- Rinse one cup of quinoa under cold water and cook according to package instructions (about 15 minutes).
- Heat olive oil in a large skillet over medium heat.
- Season salmon with salt, pepper, and minced garlic. Place skin-side down in the skillet and sear for 5-6 minutes until the skin is crispy.
- Flip the salmon and cook for another 3-5 minutes until done.
- Add chopped zucchini and bell peppers to the skillet and sauté until tender.
- Squeeze fresh lemon juice over the mixture and sprinkle with chopped parsley.
- Layer cooked quinoa at the bottom of a bowl, add sautéed vegetables, and top with salmon. Garnish with more herbs, feta, or olives if desired.
Notes
For added flavor, consider using vegetable broth to cook the quinoa. Allow salmon to rest for a few minutes after cooking.
